Bad Banana Cookies

Easy Vegan /Gluten Free/ sugar free

Ok in truth the bananas aren’t rotten or bad, but it’s an ingenious, fast and delicious way to use up the overripe bananas sitting on your counter. You know the ones; they have brown spots and have gone a bit squishy. In many countries they don’t consider bananas ripe until they reach that squishy stage. They are sweeter at that point, but we in the USA expect our bananas to be unblemished, firm and bright yellow. The riper they are the sweeter they become. This recipe has No sugar, instead it uses the natural sweetness of the overripe bananas.

Use those bananas. Don’t throw them away.  Make Rotten Banana cookies!

They are flour free, gluten free, vegan and only have 4 ingredients.


Ingredients:

*2 overripe bananas Squished

*Half a handful of Dark Chocolate Chips

*Organic gluten free Oats (Be sure they are ALWAYS Organic) I’ll tell you why at the end.

*Small handful Freeze Dried Raspberries (You can substitute fresh or try dried Goji berries, or organic raisins or blueberries)


Recipe:

  1. In a big bowl mash the overripe bananas (I use a Masher to make it easy)
  2. Mix in the oats till they are moistened and you like the consistency. Not too wet, but they should stick together in balls.
  3. In a separate bowl mash a small handful of Freeze-dried raspberries with a fork. You don’t want powder, but rather very small chunks.
  4. Half a handful of dark chocolate chips/ chunks or whatever you have
  5. Gently combine all ingredients
  6. Form balls (I like to use an ice cream scooper) Place on greased or silicone cookie sheets, gently push the balls to make round cookie shaped blobs.

Bake at 375 Degrees 15 -20 minutes, or until you are happy with the texture. They don’t contain eggs or any ingredients that actually need to be cooked, so if you wanted you could even make them raw by placing them in a dehydrator.

I like mine to have a bit of a crusty top, but a soft center and I like the chocolate to be melty.

Makes about 12 cookies.

Notes:

Don’t wait till you have ingredients on hand. Use this recipe as a starting point to customize as you and your family like. You can add nuts, any berries you like, coconut flakes or raisins. Once you’ve thrown these easy cookies together you will see how easy they are.

It’s the squishy sweet bananas that hold everything together and provide sweetness. The oats give substance. I keep freeze dried raspberries, chocolate chips and Organic oats on hand and we wait till those bananas turn bad. You’ll never look at a brown banana the same again!

So, why do you ALWAYS need to buy ORGANIC oats, you ask?

Not only are oats heavily sprayed, they actually use roundup in the silos to speed the drying of the oats. Yes, you read that right. They spray the oats post-harvest to speed the drying process! Do your own research. Truly horrifying!

Don’t ditch the oats, just buy Organic.
