Helianthus tuberosus Sunchoke ‘Early Dwarf Sunray’ (Jerusalem Artichoke)

Dwarf Sunray Sunchoke is a more compact selection that can reach 4-5’ tall as opposed to unruly floppy giant varieties that can soar to 10’. It produces large EDIBLE crops of tubers earlier, often as early as late August. The tubers are slightly sweet and mild tasting with some knobbiness, but still easy to clean. Ht 3-4ft.

Sunchokes are an incredibly productive and easy to grow plant for family gardens. They have sunflower-like yellow flowers in summer. One of the best crops to grow for food security. Winter hardy in severe cold and can be grown almost anywhere, down to zone 3. Can remain in ground all winter and dug as needed.

Sunchokes are rich in Inulin, a prebiotic fiber that feeds the our good intestinal bacteria and helps to stabilize blood sugar. It’s also low calorie and loaded with minerals like calcium, potassium,magnesium and iron. They have a slightly nutty, sweet flavor. Due to the high fiber content, some experience digestive discomfort, so start slow and drink lots of water. They are a wonderful and productive perennial vegetable with a long storage life that can grow in zones 3-9.
