The mild mushroom flavor of leaves can be enjoyed raw in salads and sandwiches or incorporated into soups, pasta sauces, stir-frys and omelets. It’s leaves are glossy and dark green, creating an unusual ornamental edible.Plant sources of Calcium are readily absorbed by the body and mushroom plant is a very rich source of Calcium…even higher than kale, which is another rich source. With some protection it can be successfully grown outdoors in the milder areas of the Pacific NW as it can take light frost. In colder areas it can be grown in large containers and brought in when severe weather threatens.
